Corn tortilla chips, homemade salsas, fresh gluten free foccaccia, Mexican rice, fajitas, Haagen Daaz ice cream cups, house made frapuccinos, a sizzling rock to cook thin slices of steak, gluten free tamari sauce, home made french fries! Where can a severely food allergic child get all these items at one place????? Four Seasons Resort in Punta Mita, Mexico.
This resort had over 20 food allergic guests during our visit last week. The food and beverage department is a well oiled machine. Our first lunch, I inquired to a person I thought was our waiter a question regarding the fajitas. His reply was, " Our fajitas have soy sauce which contain gluten- your son can not have those. Let me get the chef for you." By the way, he was a bus boy.
My anxiety level was very high going into this trip. The combination of traveling to a foreign country and surrendering the preparation of my child's meals to someone else was an extremely scary and daunting task.
As usual when we travel I contacted the head chef. In this case, the head guy is a french chef! He must think I am a lunatic-- I asked the accomplished french chef if his kitchen was able to prepare hand cut french fries in clean oil, my pancake mix, flat hamburgers and cheese quesadillas made from corn tortillas. His answer was YES. YES. YES. YES. We didn't head the word 'No' once during our visit.
Typically fajitas are eaten with flour tortillas but corn tortillas tastes just as good
